A BIT OF HISTORY
Italian cuisine originated with ancient Greek and Etruscan influences, which introduced staples like grapes, olives, and basic pasta forms, and was further developed by the Roman Empire, who spread culinary techniques and ingredients across their empire, focusing on simple, seasonal ingredients and Cucina Povera (poor cooking) principles such as legumes, grains, fruits, vegetables, and olive oil.. After the Roman Empire’s fall, the cuisine evolved through various invasions, trade routes, and the discovery of the New World, which brought ingredients like tomatoes and peppers that would later become central to dishes such as pizza and pasta. The Renaissance brought a period of lavish noble court banquets and culinary refinement, although the fundamental peasant traditions of using stale bread. Regional diversity, a focus on fresh, simple ingredients, and the distinct culinary traditions of areas like Sicily and Naples further shaped what is recognized as modern Italian food. The core of Tuscan food is its emphasis on high-quality, locally sourced ingredients to create flavorful, unpretentious dishes, a philosophy that endures today.
